Braised Beef Brisket Bourguignon
Beef brisket w/pancetta bacon, garlic, minced mirepoix & mushrooms braised in a red wine sauce garnished with Gorgonzola & homemade potato gnocchi

Heat in 375 degree oven covered, for approx. 30 mins, then rotate front to back. Continue to cook for an additional 25 - 45 mins or until internal temp of brisket is 165 degrees

Chicken Saltimbocca 
Boneless chicken breast sauteed in with garlic, shallots, sage & fresh thyme, finished in a buttery wine sauce layered with prosciutto and provolone cheese
Heat in 375 degree oven covered, for approx. 20 mins, then rotate front to back. Continue to cook for an additional 25 - 35 mins or until internal temp of Chicken is 165 degrees

Heat in 375 degree oven covered, for approx. 20 mins, then rotate front to back. Continue to cook for an additional 25 - 35 mins or until internal temp of Chicken is 165 degrees

Lasagna 
Slow braised pork & beef ragu Bolognese layered between homemade pasta sheets w/ricotta, mozzarella, herbs & marinara
Heat in 375 degree oven covered, for approx. 20 mins, then rotate front to back. Continue to cook for an additional 35 - 45 mins or until internal temp of Lasagna is 155. At this point, uncover and return to oven for 10 mins to brown cheese. Now pull the lasagna out of oven and let rest for at least 10 - 15 mins before cutting.
